THEIR STORY

Fannys Bay founders Mathew and Julie Cooper are no ordinary distillers.

The Coopers were the first to set up a distillery on Tasmania’s wind-swept northern coast. Attracted to the pristine rainwater, infused with nature’s perfect dose of sea spray, it was the perfect place to make whisky. A new still was un-affordable so Mathew built a still from his own CAD design. Soon after, distilling commenced with the first barrels put down in 2014. The Coopers are deeply involved in every step of the process, from calibrating distilling temperatures based on the weather to hand charring barrels.

Fannys Bay, also the name of a secluded cove nearby, was named after the vessel that crashed on to its shores in 1844.

Tasmanian Whisky?

In 1822, distilling was declared legal in all of Australia with the first legal distillery being built in Hobart, Tasmania. However, legal distilling in Tasmania was short lived. In 1839, the Distillation Prohibition Act ended distilling in Tasmania (though not in the mainland). Fast forward to 1992, changes to the 1839 law, as well as the 1901 Distillation Act, legal distilling had returned to Tasmania.
